Sausage and Peppers: A Meal Fit for a King

When I first met my husband, his birthday was right around the corner. I felt the urge to cook for him. I knew he was the one because I really wanted him to like it. They always say a way to a man’s heart is through is stomach lol. I wanted to impress him and made sausage and peppers with rice. I have been making this dish ever since.

 Often we have sausage and peppers with a side dish, such as homemade mac and cheese, or over rice.

Ingredients for Sausage and Peppers:

This recipe takes 30 minutes and is enough for 4 people (2 with leftovers)

1 Large onion

4 peppers (2 red, 2 green)

6 Sausage links

(I use 4 Italian and 2 spicy from whole foods)

3-5 garlic cloves ( I use 5, we love garlic )

3 tbsp. of olive oil

Salt

Pepper

In a large non-stick pot, heat oil up on low- medium heat. While the oil  is heating up, cut the peppers and onions into 4 quarters. They will make 1-2 inch pieces. The onion pieces will need to be separated into individual pieces.

By the time the veggies are cut the oil will be hot enough to add them to the pan. The peppers and onions need to cook for about 15-20 minutes total. Let them cook for 5 minutes and then add the garlic.  (garlic press works or you can chop the garlic thinly)

While they are cooking, boil some water for the sausages to go in. Once the water boils, toss in the sausages. The skin starts to cook and they will turn a white color.

Take them out of the water after 3-4 minutes, and cut them into 1/2 inch pieces. The sausages should stay together because they have been cooked a little, but the juices will seep out onto the cutting board, and some meat might sneak out.

Once all the sausages are cut add them to the pan of  onions and peppers and make sure to get any excess sausage and all the juices from  the cutting board into the pan as well. This extra juice helps the flavor a lot.

Let everything cook together for 10 minutes on medium heat . The Sausage a should be brown, cooked all the way through, and should have a nice pool of juice/sauce at the bottom of the pot.

As I mentioned this can be served by itself, which is most often, but it goes well over rice or with other side dishes.

My husband tells me this meal is fit for a king, every time he eats it.

I have made this dish for his friends too, as he requests it :).
