Mascarpone Stuffed French Toast with Fresh Strawberry Sauce 

I woke up this past Sunday morning, and was really craving some french toast! So I left my sweet husband sound asleep, and jumped out of bed!  I was excited for a delicious Sunday Breakfast! The Hubs and I love to go out for Breakfast/Brunch, but I love just as much to eat a yummy breakfast in the comfort of my own home :). What is more relaxing than lounging around in your pjs on a Saturday or Sunday Morning? Doing so in a onsie with a fully belly and happy heart ❤️.

I googled a bunch french toast recipes, and found one I really liked from the foodnetwork. the strawberry sauce pushed me over the edge 🙂

 

This is a  2-3 part recipe (poached egg optional)

 

Strawberry Sauce:

10-12 strawberries

1/2 cup sugar

Half of a lemon zest and juice

 

Grilled Cheese

Bread of your choice (brioche is most popular)

Mascarpone cream cheese

Egg

1 cup Heavy cream

1 tsp Cinnamon

1/8 tsp Nutmeg

Rosemary sprig and lemon for garnish

1 tsp butter

 

Poached Egg:

1 tsp Salt

1 tbsp Apple cider vinegar

To make the strawberry sauce cut up 10-12 strawberries, and put in a small 1 qt pan. Add 1/2 cup of  sugar on top of strawberries, and top with zest from one half of a lemon as well as the juice from the lemon.

Bring pan to a boil. As soon as it’s boiling real nice reduce heat and simmer for 25/30 minutes.

If you want to make a poached egg, place a 2-3 quart pan (will need a lid in just a bit) on medium heat, add a tsp of salt and 1 tbsp of apple cider vinegar and let warm up. If you do not want an egg, skip this step. Directions for poached egg will be in a few more steps. Alton Brown showed me how to make the perfect poached egg on his show Good Eats!

While  strawberry sauce is simmering and water for the egg is heating up, prepare your french toast mixture. Combine cream, egg,cinnamon, and nutmeg in a mixing bowl and whisk really well. Layer the mascarpone on one side of the bread. Add as little or as much as you want. I was pretty generous with mine, as you can tell in the picture :). Now leave this be for just a few minutes.

After 10 minutes the water for the poached egg should be warm enough. Use the end of your spatula and create a whirl pool in the pot. Once you get a nice big whirlpool going, crack your egg and pour in the pot. Add as  many eggs as you want to make. Cover with lid, and set timer for 5-7 minutes.

 

Last step, putting it all together :).

Melt butter in skillet on medium heat.  Place bread in mixture, one piece at a time. Let sit in mixture for 15-30 seconds, so the bread absorbs it well. If you don’t have brioche bread, you can use slightly stale bread. Shhh its my little secret. I used stale wheat bread. It absorbed the mixture like crazy and really fluffed up nicely. It’s a nice way to use bread you might otherwise throw out!! Place the bread in skillet,  dunk other piece in mixture. Add to pan! Cook on each side for 2-4 minutes, until desired level of crispness wanted. 2 minutes was perfect for me.

Take french toast and put it on the plate you will be serving it on. By this time the eggs should be done. Take a spoon with holes in it and scoop out the egg. Place egg on top of french toast.

If timer for the egg goes off before your toast is done, take them out of the pot and put on a plate. Do not leave them in the water or they will over cook.

Use a spoon and drizzle strawberries and sauce on the top of it. Add garnishment if you please 🙂
