Homemade Snickers Bars

I made a large batch of caramel sauce the other day, and knew it would take a while for us to use. I wanted to find a recipe that I could use the caramel in. I read through several and just didn’t see anything I wanted to make. They all looked great but were either time consuming, or needed kitchen utensils I do not have. Then I came across a recipe for home made snickers bars from howsweeteats blog. I did a little more research, and the blog has thousands of followers and this recipe had 770 comments. All of the comments were ranting about how delicious the snickers were.

So I decided to make homemade snickers bars. They taste just like a snickers bar. The caramel sauce I made is a little creamier and not as thick and gooey as a snickers. I liked it better and my friends said it made the snickers lighter to eat!
Ingredients:
For the top and bottom layer:
2 1/2 cups of chocolate chips ( the better the chocolate the richer the taste)
1/2 cup of peanut butter.
Each layer will have half of the above.
1 1/2 cups of caramel sauce. If you want to make your caramel sauce from scratch. It is on my blog  for Banana Fosters Splitsville.
Otherwise the caramel layer is:
1 bag of caramel (14 oz)
1/4 cup of whipping cream
For the Nougat Layer:
1 1/2 cup of Marshmallow cream (fluff)
1 1/2 cup of salted peanuts (chopped lightly)
1/4 cup of unsalted butter
1/4 cup of peanut butter
1/4 tsp of vanilla extract
1/4 cup of evaporated milk
Its easiest to make the  snickers in a tin 9 X13 pan you can throw away. Once the layers harden, it pops out of the tin for easy cutting.
Start with the bottom layer.  Combine 1 1/4 cup of chocolate chips and 1/4 cup of peanut butter in a saucepan.  If you melt the chocolate on very low heat and watch it closely you do not need a double broiler or saucepan and bowl to melt the chocolate. Once chocolate and peanut butter is creamy and melted together, pour it on the greased pan. Spread the chocolate out, so it is even across the bottom.

The chocolate needs to harden before the nougat layer is added. If  you put the pan in the freezer while you prepare the next layer, it will be ready.
For the nougat layer. Melt the butter in a pan and add the sugar. Once the sugar is dissolved bring to a boil for 5 minutes. Add in the marshmallow fluff, evaporated milk, peanut butter, and vanilla extract. Once it is all mixed together, fold in the peanuts. When the peanuts are all folded in and distributed evenly in mixture, it is ready. Take the pan out of the freezer and add the nougat. Spread the nougat evenly over pan. Place pan back in freezer for 10 minutes or so. The layer needs to completely cool before adding the caramel.

If you made the caramel sauce from scratch, you just have to wait a little and then add this to the layer.
If you don’t want to make it from scratch, you can start melting the caramel in the saucepan on low heat. Once the caramel is melted fully, add the whipping cream. Mix well.  Add to pan, once the nougat is completely cool.  This layer now needs to cool completely. If you made your caramel sauce, it will not harden as much, hardly at all actually. That is ok!
Now its time to make the top layer, and  it is the last step to having delicious homemade snickers!!!
Melt the remaining 1 1/4 cup of chocolate chips and 1/4 cup of peanut butter the same way as the top layer.
Add to the top of the caramel layer. If you used homemade caramel sauce, you will have to carefully move the chocolate across the top. The caramel sauce as I mentioned above does not harden. If you are not careful adding the chocolate, the caramel and chocolate will mix and then the layers won’t be as prominent.

If you heat up the snickers bar for 20 to 30 seconds in the  microwave and then add a scoop of ice-cream, it tastes just like the ice-cream snickers bars.
Until my next sweet tooth,
Lisa Annie
