I always love making a meal or dessert that my husband will love. He loves peanut butter cups and I had the ingredients at the house to make them. So one night when he was out with friends I made them for him.
I made mini peanut butter cups because I think anything and everything mini is cute and I love it 😍.
I used dark chocolate, and was pleased with how it turned out. Joe likes milk chocolate so these weren’t his favorite , but I know they will be when I make it with different chocolate. You can use any chocolate that makes you happy in this recipe.
Fresh peanut butter makes all the difference in this recipe. You can use any nut butter you want! We get our peanut butter from Whole Foods; we like to make it fresh! This recipe is so easy, I can’t possibly buy the ones at the store again. They taste so fresh and delightful. You can control how much chocolate or how much peanut butter. You can do mini cups, large cups, square ones. Your creations are endless, and I love it!
This recipe makes 18 minis :).
Ingredients:
4oz bars of chocolate (2 of them)
1/2 cup peanut butter
3/4 cup confection sugar
2 tbsp butter
Mini cupcake pan and liners
Everyone says that you need a double broiler to make anything with chocolate. If you are in a hurry it helps melt it quicker, but it is not necessary.
To make the first layer, melt one bar or chocolate on low heat in a non stick pan. It takes 10 minutes or so to be fully melted. I mentioned I used dark chocolate. I wanted to sweeten it up just a little so I added half of the butter and half of the heavy cream to the chocolate. We will replicate this for the top layer. You can skip this step if you want to and are happy with your chocolate the way it is
Spray the cupcake liners with a non stick spray and then using a little spoon or a piping bag and pour a little melted chocolate into them to form the bottom layer.
Let the chocolate cool for 5 -10 minutes in the freezer. While it is cooling, mix the peanut butter and confectionary sugar. Sift the powdered sugar first. You can mix it by hand or in a mixer. I find it is easier to use my kitchen aid. Peanut butter can be really thick and get hard to mix by hand. You can use a spoon or piping back to put the peanut butter layer on top of the chocolate. I used a tool similar to a piping bag. Using the piping bags, it makes it easy to get the layers exactly how you want them.
After you get the peanut butter on all of your cups, melt the chocolate for the top layer. Follow the same steps for the bottom layer of chocolate.
Let the peanut butter cups sit in the freezer for a few minutes for the top layer to harden. Take the peanut butter cups out of the freezer and remove from the cup liners.
YAY! You have homemade peanut butter cups.
