Homemade chocolate chip muffin cookies

My sister has the biggest sweet tooth ever, and was really in the mood for some chocolate chip cookies, and I wanted some cookie dough ( my guilty pleasure ;). I had all of the Ingredients to make it, so we had a cooking adventure in my kitchen and made deliciously gooey in the middle but firm on the outside chocolate chips cookies that were simply amazing. With how easy it was to make, I don’t see why I would ever buy them premade at the store again! ❤️

Ingredients:
2 1/4 cups all purpose flour
1 tsp baking soda
1 tsp salt (kosher salt had the best flavor for cooking with)
1 cup vegetable oil
3/4 cup granulated sugar
3/4 cup brown sugar (packed in)
2 tsp of vanilla extract
1 tsp of water
2 eggs
12 oz of chocolate chip morsels ( I buy whole foods morsels)

Preheat the oven to 375 degrees.

Mix all of the dry ingredients In a bowl ( flour, baking soda, salt )

Add the oil and sugar into a bowl and mix. I use my kitchen aid, but it can be done by hand too :).
When the sugar and oil are all mixed well, add the eggs one at a time,the vanilla extract and water. Once it is mixed up and has a creamy look and feel to it, then add the flour. Once the flour is mixed in well, the chocolate chips can be folded in. I like to use my rubber spatula to do this, so it does not break the morsels.

I had a mini cupcake pan, and we thought it would be fun to try cooking them a different way. So we sprayed the pan with nonstick spray and cooked the cookies for 10 min. I set the timer for 8, but they did not seem quite done, and added another 2 minutes.

Once they were out of the oven, we tried take them out of the pan and move them to rack, but it was breaking them. So we let them sit for 15-20 min. They cooked perfectly, held their structure like a muffin and were incredibly gooey  and chocolatey in the middle. The cupcake cookies were also really easy to hold and scrumptious to eat 🙂
