Frittata with red pepper, onions, and noodles

Frittata,

If your like me, when you make a pasta dish, you always have leftover noodles.

Instead of wasting those noodles, turn them into a delicious and easy breakfast or dinner meal.

I was watching, Trisha Yearwood’s Southern Cooking Show, and during a commercial this lady made Frittata, with left over spaghetti noodles. It looked so delicious and easy thought I would try it. I made spaghetti carbonara yesterday and had quite a lot of leftover pasta. 

Ingredients:
leftover pasta (I had 4 cups)
1/2 onion
5 eggs
1/4 cup heavy whipping cream
2 garlic cloves
1/2 tbsp red pepper flakes
1/2 cup cheese (parmesan or mozzarella)
1 to 2 tbsp olive oil
1 tomato
1/2 red pepper
1 tbsp white pepper
Cast iron skillet (or other sauté pan that can go in the oven)
Pre-heat oven to 425 degrees
Heat up the pan with 1-2 tbsp of olive oil. Add the onion, red pepper flakes, and garlic to the pan. Cook until the onions start to soften, about 5 minutes.

Then add the tomatoe and red pepper, until some of the juice comes out of the tomatoe.

Let simmer for 2-3 minutes. Toss the pasta in and let it all mix together for 1-2 minutes.

Mix together the eggs,cream, cheese, and white pepper.
Pour the egg mix into the pan, do not stir.

Let the eggs cook for a 5-6 minutes. The edges will start getting firm, middle will still be gooey.

Place seasonings on top if you want. I
added oregano, rosemary, parsley and spinach.

Bake for 7-10 minutes.

Let cool! It can served for dinner or breakfast the next day!
We added a little Sriracha to it and it was so tasty!
