Butter Pancakes

I grew up with my mum cooking our family, butter pancakes! They are so delicious and fun to eat!

We eat them rolled up with butter, hence the name butter pancakes :). My husband likes to eat them like regular pancakes with a little butter and maple syrup!

I make this recipe at least once a week, if not two or three times! This recipe makes enough for 4 people. I always save half of the batter and use the rest throughout the week, since it is just my husband and I.
Ingredients:

1 1/3 cup flour

1/3 cup sugar

1 egg

2 cups of milk.

Butter

Olive oil

Margarine (optional I like Brummel and Brummel Yogurt margarine)

Mix the flour, egg and sugar together. Slowly add in the milk and mix well. All the lumps should dissolve, so you have a creamy consistency.

Turn your stove top on and use either olive oil or butter in your skillet. I use olive oil, and turn the heat on high! I let the cast iron skillet get really hot, where it starts smoking. As soon as I see smoke, I turn the temperature to low- medium for 5-7 minutes before pouring the mixture on skillet.

Pour the batter into the skillet, and make whatever size pancakes you want! I find the 1/3 measuring cup makes perfect size pancakes for us! I always make little baby pancakes for Charlie, my dog, and I just use a teaspoon for that.

As soon as little bubbles start to appear on the pancake, it can be flipped. The first pancake always looks a little weird, it doesn’t turn as golden brown as the rest will. The pancakes should be a golden brown. If they start to turn dark brown, the skillet is too hot. Turn down the temperature and take the skillet off the pan for just a minute.

If you are going to be making a lot, place the pancakes on a plate, and cover with a towel to keep them warm while you are finishing making them.


 Serve them with butter, and/or any other condiments of your choice!
