Buffalo Chicken Lettuce Wraps 

I was really craving buffalo chicken over the weekend. I did not want to go out to eat, and I had of the ingredients except for tortillas. So I decided to  run to the store and get tortillas to make a wrap at home! They are sooo tasty! My husband said it was just like getting one from a restaurant.

This recipe is enough for 3 wraps and ingredients are:

2 chicken breasts

1/4 cup Frank’s Hot Sauce (more if want it)

1/2 cup mozzarella (buy in bulk and grate yourself- tastes better)

1/4 cup cherry tomatoes

1/2 cup shredded lettuce

3 tbps blue cheese crumbles

1 egg

1 1/2 cup Italian bread crumbs

1/4 cup vegetable or canola oil

3 tortillas

1 tsp butter

Garlic powder/salt/pepper to taste

To start make sure chicken is at room temperature and use a meat pounder to get it to 1/4 in thickness. This helps it cook quicker and will be incredibly juicy and tender. Preheat the oven to 400 degrees.

Next, crack and egg in a larg bowl and add the butter. Melt the butter first in the microwave for 30 seconds. Using a fork, beat the egg until it’s is mixed well and  a bit fluffy. Place the breadcrumbs in another big bowl or plate. Toss the chicken in the egg mixture until it is completely covered. Transfer to chicken to the breadcrumbs end cover the chicken entirely! Get your  hands in it and press the crumbs into the chicken!


Heat a skillet up with the oil! Once it starts smoking, place the chicken in the pan. Let the chicken fry 3 minutes on each side . The chicken will be a dark brown!!  It is not burnt I promise. Drain the oil from the pain, and place the chicken in the oven for 15- 20 minutes. It needs to cook until the chicken is just under 160 degrees. It continues to cook for a few minutes and you do not want it to dry out.

As the chicken is baking, the cheese and lettuce can be shredded and tomatoes cut.

The tortillas can  used as is, or wrapped in foil and baked for 4-5 minutes, or tossed in a frying pan with a 4-5 tbsp of oil for 10 seconds on each side. The become very pliable and it is much is easier to mold if cooked in the oil. It is of course not the healthiest option here! It works really well if you are making tacos with the smaller tortillas.

Once the chicken is done baking, let it cool for 10 minutes and then it will slice perfectly. It is easiest to cut the chicken at and angle.  Once the chicken is all cut, place in a large bowl and toss in the hot sauce. I though 1/4 cup was the perfect amount for flavor and coating the chicken, but use more or less for the flavor you desire.
