I really wanted to make banana nut bread this past weekend. My bananas were getting old, and I wanted to fill our home with smell of fresh banana bread. I didn’t have any nuts, but had oatmeal and flax seed. So I thought I would try something new, that was also much healthier.
Ingredients:
1/2 cup of sugar
1 cup of whole milk yogurt ( I don’t like low fat yogurt but substitute if you do 😃)
1 tbsp of flax seeds
2 cups rolled oats
3 old bananas
3 tbsp water
4 tbsp melted butter
1 egg
Mix everything together. I find it easiest to use my kitchen aid. The mixture gets pretty thick.
I used an oversized muffin pan, and filled it with halfway up with butter. A regular cupcake pan, or bread pan would work great too.
Bake in oven for 18-25 minutes. (Cupcakes will take less time, and a bread pan will take more time)
They will be flat like a cookie, but with the consistency of a muffin!
I enjoy mine warmed up with a little butter on it! My husband loves them just the way they were. Your options are endless with these.
