If you are looking for a way to spice up a side of rice look no further :p. I cooked the most flavorful and scrumptious wild rice a few weeks ago and have since made it a few times! My husband requested it! So, it’s definetly worth sharing from my family to yours! This recipe is a little spicy. If you don’t like spice or have kids, leave out the red pepper flakes and you will still have a yummy side dish.
This recipe is for 2-4 people
Ingredients:
1 cup of wild rice
2 tbsp butter
3 green onions
1/2 -1 tbsp red pepper flakes (depends how spicy you want it)
1/2 yellow squash
1/2 tbsp garlic powder ( or 3 garlic cloves )
2 tbsp of Fond de Poulet) Chicken stock (the flavor is wonderful and it is naturally low in sodium)
3 1/2 cups of water
Salt and pepper to taste
In a 1-3 quart saucepan, melt the butter. add the green onions, squash, red pepper flakes and garlic powder let cooking for 2-3 minutes. Add the wild rice, and let simmer for 1-2 minutes.
Add the chicken stock and water. Now let cook, until rice is tender. It takes every bit of 45 minutes to an hour, so you will need to plan ahead of you want to make this! It is worth the time!!!!
You can have this rice with any dish. It is a delicious way to spruce up your side dishes.
It was the perfect side to chicken thighs baked in sun dried tomatoe cream sauce, and sautéed sea bass last night!
