Three years ago, before I decided to document my experiences at restaurants, my husband and I went to Nashville for an extended weekend. We had such a fun weekend, having drinks, seeing shows, listening to music, and eating delicious food. We really lucked out when we met a gentleman named Al. Al owned his own taxi service and was hanging out outside of our hotel when we got there. He had a little black bus that was decked out. Al offered to be our chauffeur the entire weekend we were there. He was incredibly affordable. Al told us about the restaurant Flyte World Dining and Wine Bar, and not only drove us there but made us reservations. He loves the places so much, he tells everyone he knows about it.

So Joe and I had dinner at Flyte. We were absolutely blown away. To do this day, we still talk about the dishes we had and the dessert ( gosh it was heavenly). We had a pear sorbet paired with a dessert wine. The service was fantastic, and overall we just had a really really lovely time. Fast forward three years, we finally made it back Nashville and to Flyte. We were a little bit nervous that it wouldn’t be as good as we remember, but there was no need to be.
When you first walk in to Flyte the words sexy and casual comes to mind. You could easily be dressed to the nines in a little black dress or in jeans and a cute top and feel in your element. The walls are painted with bold colors with beautiful paintings on the wall. A local artist displays their artwork here, and you can buy the pieces too. Soft rock music is playing gently in the background. The music was loud enough to hear it, but soft enough you could still hear the person next to you talking.
This was one of my favorite pieces of art. I just love flowers and the colors here.
We decided to have a cocktail at the bar, because we remembered having one of a kind cocktails before. We remembered correctly. They had an assortment of cocktails, and each cocktail was made with a lot of tlc. Joe and I occasionally will order for each other. It keeps things interesting :P. We must both have had an eye for this one cocktail, Baker Street Basil because we both ordered that for each other. It had Corsair Gin, lemon, basil simple syrup, and orange bitters. It was very clean tasting, refreshing, and you could smell the orange with every sip. We also looked over the wine menu, as we always do at places. The menu had a great selection of wine and was moderately priced.
We were seated right by the kitchen. It was a neat experience to see Chef Christopher Stallard and his staff in action.
We started with a meat and cheese board and wine pairing.
We had gorgonzola dolce, Saint Paulin cheese ( aged in normady caves), and Eileen (from Bonnie Blue Farm), a goat cheese from Noble Springs, house made crackers, chicken liver pâté and fennel salami. The chicken liver pâté melted in your mouth and drove our taste buds crazy with flavor. Everything was fresh and not a bite was wasted.
We had a wedge salad with blue cheese dressing. It had whipped gorgonzola and buttermilk ranch dressing. The dressing was rich and creamy.
For dinner, the one dish I really wanted they were out of :(, and decided on getting the Salmon entree. Joe ordered the Pork Belly entree.
While we were waiting for our meals, our server educated on us on their wine menu, and wine in general. We also learned that the Chef Christopher Sallard who was the Pastry Chef whom made the pear sorbet dessert last time we were there, is now the Executive Chef.
Southeast Family Farms Pork Loin and Belly with sweet corn, purple hills, and pole beans. The pork belly was juicy and delectable, you can see how beautiful this meat was in the picture.
Columbia River King Salmon with summer squash, tomato farro, and olive oil. The salmon was cooked really well. It had wonderfully crispy skin. While I would order this dish again, I would have to be in the mood for it. It was a very citrus filled entree and would have been perfect on a hot summer night, but I just was not feeling the citrus this night.
We had a variety of wine pairings, from Sauvignon Blanc, Chardonnay, Pinot Noir, to big bold Cabernets.
We ended the night with Mascarpone Cheesecake. It was creamy, airy, and delightful.
If you are visiting Nashville, going off the beaten path a little will prove to be the best decision you will make. I recommend you have dinner at Flyte, and when you do I would love to hear about your experience here as well.
